Fish of the Caesionidae family are collectively called gurukun in Okinawa. Though they are known as red fish, when swimming in the sea they have a beautiful azure color reminiscent of Okinawa’s coastal waters. As a fish that can be caught year-round in Okinawa and that is very familiar to locals, gurukun has been designated the prefectural fish. In Okinawa, it is caught using traditional fishing methods such as agiyā (drive-in net fishing). High in protein and low in fat, gurukun is a popular fish in Okinawan cuisine, with deep-fried gurukun karaage being a signature dish.
