Mībai refers to fish of the grouper family. Okinawa’s coral reef waters are home to many species of mībai. Among them, the leopard coral grouper, known as akajin mībai, is regarded as one of Okinawa’s three most prized fish and is cherished as an auspicious delicacy for celebratory occasions. In recent years, Yaitohata (malabar grouper) farming has become more widespread, particularly in the Yaeyama Islands. Known for its mild and refined flavor, this fish has tender, gelatinous skin and a moderate fat content, with flesh that releases rich umami with every bite. Local Okinawan dishes such as mībai-jiru (fish soup) and māsu-ni (salt-simmered dish) offer simple yet delicious ways to enjoy its taste.
