In the Okinawan language, bitarō refers to certain members of the snapper family including the humpback red snapper and the common bluestripe snapper. The humpback red snapper lives around deep rocky reefs and is distinguished by its bright pink coloring, large eyes, and endearing rounded side profile. The common bluestripe snapper, in contrast, lives around coral reefs and, true to its name, is easily recognized by its yellow body marked with four vivid blue stripes. Both species are staples of Okinawan restaurant menus, and are especially popular pan-fried in butter. Their mild-flavored, white flesh remains tender when cooked, making them well-suited for a variety of preparations including braising or salt-grilling.
