Among Okinawa’s fish, akamachi is a highly popular and prized fish. In Japanese, it is also called hamadai (Deepwater longtail red snapper). It is characterized by its vivid red coloring and long, extended tail fin, and is known as one of Okinawa’s three top prized fish. It is easily recognized by its all-over red coloring and its beautiful, long V-shaped tail fin. Its pale pink flesh is sweet and rich in umami, making it a prized fish comparable to red seabream and commanding a high market price. Because the skin is also delicious, it is often served as sashimi after light blanching. Akamachi is prepared in a wide variety of ways, including grilling, simmering, and in fish soup.
