The mimijā (humpback red snapper) is prized for its excellent flavor and is considered one of the more premium species even among snappers. The name mimijā means “ear fin”, and is said to come from the fact that its tail fin resembles the shape of a human ear. Mature mimijā are distinguished by their strikingly bright and beautiful red coloration, and their flesh has a refined sweetness and rich umami. They are prepared in a variety of ways, including as sashimi, pan-fried in butter, braised, or māsu-ni (salt-braised), a classic Okinawan dish, which is especially popular.
