Dragon fruit takes its name from its rind, which resembles dragon scales. Although dragon fruit is native to Central and South America, a new Okinawa-developed variety called Impact Ruby can only be enjoyed in Okinawa. The tender flesh is speckled with tiny black seeds, and offers a juicy, refreshing sweetness. Dragon fruit is gaining attention as a superfood. Its red flesh contains betalain, a polyphenol with antioxidant properties and noted for its beauty and health benefits, and is also rich in B vitamins, minerals, and dietary fiber. It is typically eaten by cutting the fruit in half and scooping out the flesh with a spoon, or made into juice. It is also enjoyed in salads, or in nutritious breakfast bowls topped with yogurt and seasonal fruits such as local shima banana.
